Our dried products have to be consumed after rehydration in abundant warm water for a couple of hours. We suggest to quickly rinse the rehydrated product to erase any residuals. Once the product has been rehydrated it has to be consumed after cooking and in XY.
Our deep-frozen products have to be consumed after cooking at high temperatures for a prolonged period of time.
The domestic storage can vary in its time depending on the keeping temperature: its shelf life if kept at -18°C; 1 month if kept at -12°C; 1 week if kept at -6°C; 3 days If kept in the ice compartment. It is possible to find all the usage instructions in the labels. Once the package is open, we suggest to consume the product within 24 hours.

IQF products are subjected to a deep-freezing process up to a temperature of -18° degrees, or even less. The cold chain is used in order to preserve the organoleptic characteristics of the product: every stage is important to guarantee quality, hygienic standards and food safety. Here in Pagnan we put extreme attention to all the stages that take place in all our plants. That is why every phase, from the transportation and the receiving of the raw materials, to the processing and the storage in the cold rooms, is controlled and registered with the most sophisticated and modern systems. To guarantee our work and give our clients a safe and controlled product, we have also voluntarily joined the most important standards of international certifications.
The difference between deep-frozen and frozen products consists in the temperatures that are reached during the process and the times of this process. IQF means reaching a temperature of -18°C, or even colder, in a very short time. The rapid deep-frozen process allows the formation of micro-crystal of ice that do not damage the biologic structure, the organoleptic characteristics and the taste of the ingredient. The frozen process, instead, brings the product at higher temperatures and for longer times. This process allows the formation of bigger crystal of ice, that once thawed, could affect the organoleptic characteristics of the product, reducing its quality.
Our deep-frozen products can be defrosted directly in a pan or in a pot, without waiting that it is completely defrosted: by doing this, the organoleptic characteristics are kept. It is possible to defrost the ingredient also in the microwave, following the processor instructions, or when still sealed, by soaking it in water at room temperature.
We suggest to keep the package in a dry place and away from direct lights and heat sources; it is possible to preserve the product in the freezer. Once the package is opened, we suggest to consume the dried product in XY
